The macroscopic properties of liquid foams or emulsions strongly depend on the microscopic dynamics of amphiphiles (surfactants, polymers, particles) that adsorb to these fluid interfaces. I will review some techniques that are useful to characterize interfacial dynamics such as dynamic surface tension, soap film drainage and interfacial rheology. I will present examples where we coupled these techniques to understand the adsorption mechanisms of several complex amphiphiles such as photoswitchable surfactants, polymer multi-layers or hydrophobic particles.
